Chorizo ​​is a product that is always associated with Spanish gastronomy, but in Galicia this meat sausage has its own place on the podium of gastronomic pleasures.

WHAT ARE CHORIZO?

Chorizo, and other similar sausages like androlla, are one of the oldest ways to preserve meat. Before the invention of refrigerators, it was very difficult to keep meat fresh for long periods before it had to be eaten. Sausages were one of the few ways to achieve this.

The preparation of chorizo ​​specifically involves using minced pork that is seasoned with various spices. Among these, paprika stands out, giving it its flavor and characteristic red color.

This mixture is then stuffed into a casing, tied, and the smoking process begins, traditionally done with wood. At Embutidos Montepicato, we still use this method. After smoking, the chorizos are cured for a period of time to achieve an exceptionally flavorful product.

Among Galician chorizos, chorizo ​​encebollado is also very common. In this case, onion is added to the mixture to give it a unique and distinct flavor.
