At Embutidos Montepicato, we know that the best flavor comes from respecting centuries of traditional chorizo-making methods. That's why we make our semi-cured chorizo using the same methods as always , starting with selecting the right pork to achieve the perfect flavor and texture.
Once the meat is chosen, it is seasoned with a mixture of spices where paprika (sweet or spicy) has the greatest weight, and it is what gives the chorizos their traditional red color.
SMOKING IS THE KEY TO THE FLAVOR OF OUR CHORIZO
The real key to distinguishing good chorizo from bad is the smoking process . This takes place once the mixture of meat and spices has been kneaded, stuffed into a natural casing, and tied. The chorizos are then hung and smoked. In our factory's manufacturing process, we continue to use specially selected oak wood to achieve the unique flavor that characterizes all our smoked sausages.
Finally, the sausages go through the curing process where, depending on the duration, we distinguish between cured and semi-cured sausages .
