Galician Androlla is one of the most delicious yet lesser-known Galician sausages. It's similar to botillo, botelo, or butelo, so it's important to know how to distinguish between them. In Galicia, Androlla is a pork preparation typical of the mountainous areas of Ourense and Lugo, found in all the municipalities of Os Ancares and in the municipalities further afield, such as Cabeza de Manzaneda and Pova de Trives. The Androllas from Navia de Suarna and Viana do Bolo are particularly famous; these towns hold gastronomic festivals dedicated to enjoying this delicacy, which you can buy online here in our online store.

WHAT IS GALICIAN ANDROLLA?

Androlla is made primarily from pork rib meat, although it may include some other cuts of meat. The meat is ground, pounded, and seasoned with a mixture of salt and spices, then stuffed into a pork or beef casing. Once this process is complete, it is smoked with wood and left to cure.

Naturally, there are slight variations in the recipe depending on the region and cook. That's why at Embutidos Montepicato we use our own traditional recipe to make our Galician androllas, ensuring they have a unique and distinctive flavor.

HOW DO YOU EAT ANDROLLA?

Galician androlla is a sausage that is eaten cooked and the most traditional way to eat it is with cachelos and grelos or as part of a Galician stew.

The ideal time of year to enjoy a good Galician androlla is winter, as it's a very hearty dish with an exquisite flavor. In Galicia, it's traditionally prepared during Carnival or Entroido.
