Galician chorizos, cured the old-fashioned way
The artisanal process we use at Embutidos Montepicato to make our Galician chorizos begins with selecting the finest pork. This ensures that it contains the right levels of fat and maintains the desired flavor.
This meat is prepared with various spices, following traditional recipes for making Galician chorizo in the Lugo region. The mixture is stuffed into a casing and tied to begin the process in which our chorizos truly acquire their distinctive flavor: smoking. For this, we continue to use traditional wood-fired smoking.
Once smoked, our Galician chorizos undergo a longer curing process than other varieties, such as our semi-cured Galician chorizos . This results in a firmer texture, making them perfect for eating without cooking. Our cured chorizos are the ideal accompaniment to any charcuterie board or simply enjoyed with a slice or two of bread.
