Thanks to its quality and wonderful flavor, this cheese originating from Terra Chá (made up of the municipalities of Vilalba, Muras, Xermade, Abadín, Guitiriz, Begonte, Castro do Rei, Cospeito and Pastoriza), obtained in 2008 the protection granted by belonging to a Protected Designation of Origin.
The key to the fame of this type of cheese has been largely due to its balanced flavor and the particularities provided by its smoking process.
How is San Simón cheese made?
To make this magnificent cheese, milk from some of the finest Galician cows is used: Blondes, Friesians, and their various crosses. But what truly defines the cheesemaking process is the smoking process, which gives it its distinctive rind. This is achieved using wood from a tree that is very abundant in the area: the birch. This process is what imparts that unique flavor.
