WHAT IS AN AGED SHEEP'S CHEESE?

There are many different types of cheese made from sheep's milk, and it can not be easy to determine which is which.

The first way to distinguish one cheese from another is its origin: cow, goat, sheep or a mixture of one or more of these milks.

Once the origin of the cheeses is established, the best way to distinguish them from one another is by their degree of aging. Cheese aging is a maturation process in which the main ingredient is time. Although a variety of other techniques, such as smoking, can also be used.

In the case of sheep's cheeses we can distinguish 4 grades:

Young sheep's cheese is when the cheese is consumed almost as soon as it is made. At this stage, the cheese is usually mild and has a softer texture.

Semi-cured cheese. The term "semi-cured" is probably the most variable from one producer to another. Essentially, semi-cured sheep's milk cheeses are cheeses aged for less than 6 months that combine the best of both worlds.

Aged cheese. After six months of aging, sheep's milk cheese is considered aged. During this time, the cheese has lost almost all of its liquid. Therefore, its flavor and aroma become more intense, and its texture hardens.

Aged cheese. When a cheese reaches 12 months of aging, it is considered an aged sheep's milk cheese. Like a fine barrel-aged wine, time and a proper preservation process allow the product to bring out its best flavor and aroma, transforming it into a delicacy that only the most discerning gourmets can appreciate. In the case of Breogán aged cheese, the aging time is 14 months.
