Roasted Pork Shoulder

Roasted pork shoulder is very similar to our cooked ham hock, as both come from the same part of the pig: the shoulder, or lacón in Galician. This is the front leg of the pig. This characteristic distinguishes these two cured meats from those like York ham or Serrano ham, which are obtained from the hind legs of the pig.

As with all our products, when preparing our roasted pork shoulders we strive to convey all our care and attention, as this is the guarantee of obtaining that unique and exciting flavor that delights those who try our roasted shoulder.

Our process as sausage makers begins with selecting the finest raw materials, identifying the shoulder hams with the lowest fat content and highest flavor. We then debone the hams at our factory in Lugo. Next, we season them with our special spice blend, which gives them a unique taste, preparing them for the final step: roasting. In this final process, we ensure that all our hams are cooked to perfection.

What distinguishes roasted shoulder from cooked ham hock?

As we explained earlier, paleta and lacón share the same origin, so the differences between the two are very minor. These differences lie mainly in the cooking process: lacón is cooked in liquid, while paleta is roasted in an oven. The other major difference is the flavor; while lacón has a milder, more neutral taste, roasted paleta is spicier with a very subtle hint of heat that gives it a distinctive flavor.
