This pomace brandy from the Ribeira Sacra region is blended in a recipe developed by the Augavella winery, following the traditional Galician pomace cream liqueur recipe. The key ingredient is cream made from some of the finest milk in the world: locally sourced milk from Galician farms. This cream and the pomace brandy are perfectly combined with other ingredients such as toffee, cocoa, vanilla, and cream to produce a smooth liqueur with an alcohol content of just 15%.

What is Galician pomace cream?

Orujo cream is a type of spirit produced in Galicia. Although its light brown color might lead one to confuse it with Irish cream liqueurs like Carolan's or Baileys, they are actually two very different drinks, both sweet and flavorful.

To begin with, Galician pomace cream is made from white pomace, and more specifically, from aguardiente, which is the pomace produced from the fermentation of the grapes used to make wine: also called bagasse. Irish creams, on the other hand, are made from whiskey.

Based on a spirit, cream and other ingredients are added. Cocoa, toffee, and vanilla are common among these, but the exact ingredients depend on each manufacturer's recipe.

Galician pomace creams generally share a sweet and very mild flavor. Combining the alcohol with cream significantly reduces its intensity, resulting in a drink with a moderate alcohol content. This is a welcome feature because the pleasant taste of this liqueur makes it easy to overindulge without realizing it.
